HEALTHY TREATS FROM NATURAL HARRY

Natural Harry (aka Harriet) is something of a health food guru around our parts. Back in the day, she was serving up organic plant-based smoothies and raw desserts out of her caravan in Barwon Heads (which also happens to be the idyllic seaside town Kip&Co co-founder Hayley lives in!). These days, Natural Harry is an accomplished cook-book author, with two best selling books under her belt that share her love of plant-based recipes that look naughty, but are just plain nice (without compromising on taste, thank you lord!)

Grilled zucchini pea, mint and parmasan salad
Grilled Zucchini, pea mint, and ‘parmesan’ salad  Serves 2 Prep Time: 10 minutes Cook Time: 20 minutes Difficulty: Easy 2 large zucchinis, thinly sliced lengthways (mandolins are handy) ½ cup almonds, chopped and toasted 1 cup fresh peas ½ cup fresh mint leaves 1 tablespoon baby capers 2 teaspoons lemon zest 2 tablespoons coconut aminos (can be found at health-food stores and online) ½ cup cashew parmesan Heat a large chargrill pan over medium heat and grill the zucchini slices on both sides. Roughly chop the almonds and toast on a hotplate over a fire or in a non-stick frypan over medium heat. Layer the grilled zucchini, peas, mint, capers, toasted almonds and lemon zest on plates to serve. Drizzle with coconut aminos and sprinkle with cashew ‘parmasan’ Green Smoothie 2 Zingy Green smoothie  Serves 1 Prep Time: 2 minutes Difficulty: Very Easy 1 cup frozen mango 2 big handfuls spinach 1 sprig mint 1 lemon, juiced 1 cup apple juice Combine all ingredients in your blender. Pulse to evenly combine and blend until smooth. Turmeric Spiced Oats with Stewed Blueberries and Maple Turmeric Spiced oats with stewed blueberries and maple Serves 2 Prep Time: 2 minutes Cook Time: 10 minutes Difficulty: Very Easy 2 cups organic whole oats 2 cup water 2 cups plant-based milk ¼ teaspoon turmeric ¼ teaspoon cinnamon 1 cup organic frozen blueberries 2 tablespoons maple syrup Combine oats, water, milk, turmeric, and cinnamon in a saucepan and stir well. Cook over low heat, stirring often. Place blueberries in a small saucepan and stir over low heat until thawed. Serve in bowls topped with maple syrup. Yum! Dirty Chilli Chai with Coconut Milk Dirty Chilli – Chai  Serves 2 Prep Time: 2 minutes Cook Time: 5 minutes Difficulty: Very Easy 1 Tablespoon Caffeine free chai mix a pinch to 1/8thteaspoon chili powder 1 cup coconut milk (canned – light) 2 shots espresso Add the chai mix and chili powder to a small saucepan with ½  cup water. Simmer over a low heat for a few minutes until the mixture becomes aromatic. Make your espresso shots. Add the coconut milk to the simmering mixture and return to a simmer, stirring well. Add the espresso shots, stir well and strain into 2 mugs. Dust with cinnamon. Sweeten to taste. I used 2 teaspoons pure maple syrup. Low res
